Sockeye Salmon – Full Case

Sockeye Salmon is considered the most nutrient dense wild salmon due to it’s high omega-3 oil content. For over a decade, sockeye salmon is far and away our most popular product. A full case is 30 pounds of individually vacuum sealed loin filets.

Keta Salmon – Full Case

Keta Salmon is a light, mild species of Pacific Salmon. This is the most widely consumed salmon species in Alaska and has become a cost effective option for salmon lovers in the southwest. A full case is 30 pounds of individually vacuum sealed salmon filets. Keta is a large salmon and loin filets average 1.5 pounds per package.

Salmon Caviar – Full Case

This roe is cured using a custom 3% brine for milder flavor and lower salt content than most. Keeps 2 weeks in the refrigerator and 2+ years in the freezer. A case contains 12 1kg (2.2 pound) containers (a total of 26.4 pounds). The wholesale price is up considerably this season due to increased worldwide demand of this highly nutrient dense food. Save them all for yourself, or split with friends.

We have 1 WHOLE BEEF available this season. Eartag #46, we have record of this steer from birth to finish. A total of 434+ pounds of beef for your freezer. A great option to split yourself among a few families. Each cut is individually vacuum sealed and/or paper wrapped and boxed in convenient 25 pound cases. 20 total cases. We have BEEF QUARTERS available this season. Eartag #14, we have record of this steer from birth to finish. A total of approximately 100 pounds of beef for your freezer. A great way to get a sampler of every cut the beef produces. Each cut is individually vacuum sealed and/or paper wrapped and boxed in convenient 25 pound cases.  Alaska Wild Seafood

Kenny Aschbacher – Commercial Fisherman – Kodiak, Alaska

I am a harvester of sustainable resources, a professional hunter-gatherer. My summer months are spent aboard a commercial fishing boat catching wild fish to blast freeze and sell during the off-season across the southwest. Twenty seasons of experience and possession of a Kodiak limited entry seine permit allow me to successfully harvest and deliver sashimi grade salmon and seafood to quality conscious consumers. My best fish are specially cared for and packaged for my family and a few customers who desire the knowledge of where, how, and who is harvesting the food we eat. I am the quality control. Samurai cuts are made within minutes of careful landing. Each salmon is put to bed on shaved ice and delivered to a shore based state inspected facility to be hand filleted, portioned, vacuum-sealed and blast frozen to -20. Once frozen, the salmon are boxed, palletized and shipped via Alaska air freight and/or sea-land transport to Phoenix, AZ and Albuquerque, NM for cold storage and distribution in the southwest by me and my wife.

Keta Salmon

Keta (its Latin name), known in Alaska as chum or dog salmon, has become quite popular with Wild Seafood lovers across the southwest! Mild and wild, delicious and 1 gram of omega-3 oil per serving. A delicious salmon poached, baked, grilled smoked and even fried for fish and chips! Excellent for fish tacos, a great substitute for halibut and all other whitefish. Nutritionally speaking, this salmon is superior to nearly all whitefish. Package sizes and cuts vary. We currently offer loin filet salmon bacon/belly. Smaller cut portions are available by special order with a 20% surcharge.

Sockeye Salmon
Darkest red and most powerful salmon flavor. Vegetarian pelagic feeder provides natural deep red flesh. 2 grams of Omega-3 oil and 22 grams of protein per 3oz cooked portion. Worldwide, sockeye is the Japanese preferred salmon and considered the healthiest due to its high omega-3 oil content. Package sizes and cuts vary. We currently offer loin filet, tail filet and salmon bacon/belly.

Salmon Bacon – Salmon Belly

We currently offer both keta and sockeye salmon bacon/belly. The belly cut of salmon is fattier, richer and the most delicious cut of fish. Sometimes called toro, this cut can easily be grilled, smoked, poached or seared. Great for salmon tacos, salmon salads, omelets and more! Package sizes average 2 pounds each.

 Beef-100% Grass-Fed & Grass-Finished

Our herd is raised and finished on native ancient prairie grasses near the Kiowa National Grasslands on the high plains of northeastern New Mexico. Our goal is to produce the finest beef in the world! We are setting a standard for grassFAT beef: our cattle are born and raised on the same ranch their entire lives, about 3 years, eating all grass all the time; truly grassfed to finish. Since 2020, we have diversified our processors and currently use 2 different small USDA plants which are each family owned and operated. Our beef is dry aged 14 days and stores well in the freezer (0 degrees or colder) for at least 1 year.

Grassfed Beef Bones & Organs

Soup bones for broth, marrow bones for roasting and broth. 2.5 pound packages are average size. In our experience, 1 pound of bones will yield approximately 1 quart of broth.

Beef Organs: Liver and Heart. We also offer tongue, cheek and tallow.

Grassfed Beef Ground

Our finest steakhouse GrassFAT (80/20) grind, incredibly delicious 5 star burger! This top notch ground beef contains all healthy CLA-rich grassfat! Great for burgers, tacos, meatloaf, beef sausage and more. Approximately 1 pound vacuum sealed packages.

Grassfed Beef Roasts & Savory Cuts

Beef Short Ribs: delicious combo of meat, fat and bone. Works great for slow cooking, broth, grill and more. Super tasty and tender with a slow and low cooking method. $12 per pound

Beef Cross-Cut Shanks: flavorful delicious meat, excellent in broth/stock. We typically oven roast the shanks then cover in water and boil several hours, add veggies and boil even longer. The traditional cut for osso bucco. $12 per pound

Chuck Roast: bone-in and amazing. Slow roast in the oven or crock pot. Typically about 3-4 pounds each.  $12 per pound

Grassfed Beef Steaks

Steaks are individually vacuum sealed. We love these! Although our beef is dry aged 21 days, we age these steaks in the fridge 1-2 days before cooking. Remove steaks from fridge/packaging, pat dry and sprinkle Kenny’s Original or NM Spice Rub on each side. Let stand about 20 minutes before cooking.

Tenderized Round Steak/Cubed Steak: great for tartare, steak fingers or making easy beef jerky. $18 per pound

Top Sirloin Steak: incredibly delicious and grill friendly. $22 per pound

T-Bone Steak: slow roast or grill. $36 per pound

NY Strip Steak: boneless, thick cut and delicious, perfect for grilling. $36 per pound

Ribeye Steak: bone in and amazing on the grill or seared on the stovetop. $36 per pound

Tenderloin/Filet Mignon Steak: thick cut and incredibly tender. $48 per pound

New Mexico Pork

100% Locally raised in Albuquerque’s south valley. Fed fresh grazed farm forage and finished on a ration of peanuts, pecans and hemp seeds. Absolutely THE BEST pork you will ever taste. We are raising our hogs to a live weight average of 300+ pounds, almost twice as large as commercial pork. We offer a few standard traditional cuts for convenience, including: ground pork, pork sausage, bone-in pork chops and pork belly.

Raw, local and unfiltered! Although our primary honeys are sourced in Arizona and New Mexico, we offer 10+ varieties of USA floral source honey. Deep dark and medicinal to mild and mellow. Local and regional, we’ve got it all.

Bariani Extra Virgin Olive Oil

Grown, harvested, cold pressed and bottled by the Bariani family on their estate near Sacramento, CA. Pure and flavorful, delicious. This is the freshest, best olive oil we’ve ever tasted and has remained our favorite for over 15 years! The harvest for black (ripe) olives begins each fall in late October and continues as the olives ripen through December. Available in 1.0 liter bottles.
