Sockeye Salmon Bundle

Sockeye Salmon is considered the most nutrient dense wild salmon due to its high omega-3 oil content. For over a decade, sockeye salmon is far and away our most popular product. Sockeye filets are approximately 1.25 – 1.5 pounds each and are pin-bone out (PBO).

Quarter-Side-Whole Beef

A whole, side, or quarter beef offers convenience and an incredible variety, but it’s best suited for those who have time to explore different cuts and cooking methods. While steaks are limited, you’ll receive plenty of ground beef, roasts, ribs, and more to work with. A general yield includes: Ground Beef (50-60%), Roasts, Ribs, Shanks & other Savory Cuts (30-40%), and Steaks (10-15%). Based on average American beef consumption, a Quarter Beef sustains two people for one year.

All weights are approximate, each beef is different, and individual cuts will vary. A whole beef can yield up to 500 pounds total. All beef is packaged to our specifications at a USDA processing facility. Individual beef cuts will be vacuum sealed or paper wrapped, boxed, and ready for your freezer. Beef bones and organs can also be available upon request.

Arizona Medjool Dates – Full Case

Grown in Yuma, Arizona. These large Medjool dates are delicious and do contain a pit. Harvested late summer through early fall. We store these amazing dates in the freezer immediately following harvest to maintain freshness. A full case contains 10 pounds of loose dates.

 Alaska Wild Seafood

I am a harvester of sustainable resources, a professional hunter-gatherer. My summer months are spent aboard a commercial fishing boat catching wild fish to blast freeze and sell during the off-season across the southwest. Twenty seasons of experience and possession of a Kodiak limited entry seine permit allow me to successfully harvest and deliver sashimi grade salmon and seafood to quality conscious consumers. My best fish are specially cared for and packaged for my family and a few customers who desire the knowledge of where, how, and who is harvesting the food we eat. I am the quality control. Samurai cuts are made within minutes of careful landing. Each salmon is put to bed on shaved ice and delivered to a shore based state inspected facility to be hand filleted, portioned, vacuum-sealed and blast frozen to -20. Once frozen, the salmon are boxed, palletized and shipped via Alaska air freight and/or sea-land transport to Phoenix, AZ and Albuquerque, NM for cold storage and distribution in the southwest by me and my family.

Sockeye Salmon
Darkest red and most powerful salmon flavor. Vegetarian pelagic feeder provides natural deep red flesh. 2 grams of Omega-3 oil and 22 grams of protein per 3oz cooked portion. Worldwide, sockeye is the Japanese preferred salmon and considered the healthiest due to its high omega-3 oil content. Miso Marinated Black Cod

A delicacy renowned for its rich, buttery texture and deep umami flavors. Often served with a side of steamed rice or seasonal vegetables, miso-marinated black cod offers a perfect balance of taste and texture, making it a favorite in both Japanese and Western cuisines.

Smoked Black Cod

Smoked black cod, often called smoked sablefish, is a delicacy known for its silky texture and rich, smoky flavor. Its naturally high oil content makes it perfect for smoking, resulting in a melt-in-your-mouth experience. It can be enjoyed on its own, added to salads, or served alongside creamy pasta dishes for a luxurious touch.

Ingredients: black cod, brown sugar, salt, garlic powder, onion powder, red chile flakes.

Black Cod – Sablefish

The premier fish of the Pacific Ocean! Sablefish is our favorite “special occasion” dinner! Incredibly oily and unbelievably delicious! This fish has a preferred diet of Alaska king crab. Also known as Black Cod, although not a cod at all. High oil content, delicious and juicy. This is an absolutely great fish and so tasty steamed, seared or grilled. Difficult to overcook. Excellent omega-3 oil content. Package sizes vary, however, black cod filets are typically 1.25 – 1.5 pounds each. Skin on and PBO (pin bone out)

The Alaskan sablefish fishery is managed through the North Pacific Fishery Management Council’s Gulf of Alaska and Bering Sea/Aleutian Islands Groundfish Fishery Management Plans. It is primarily a small boat fishery with nearly 400 vessels. The fishing season lasts from approximately March 1 – November 15. Management measures include a total allowable catch which is divided among gear types (trawl and fixed) and an individual fishing quota (IFQ) program for the majority of fixed gear. Fixed gear (longlines and pots) harvests around 85% of the sablefish quota and trawl gear about 15%. The State of Alaska manages state fisheries that harvest sablefish outside the IFQ program. (They are managed under a shared quota system – all permit holders receive an equal share of the annually determined catch quota.) Sablefish populations are near or above target levels in the North Pacific.

Halibut Filet

Halibut management is conducted by the International Pacific Halibut Commission combining conservation and management efforts of the USA & Canada. In 1995, around the time that Kenny began his commercial fishing career, the state of Alaska put halibut on an IFQ (Individual Fishing Quota) system. This system has increased the value of the fishery, increased the quality of fish, cut back on wasted halibut and dramatically improved safety for fishermen. However, halibut can still be a dangerous fishery with a high injury rate. The IFQ system works by selling individuals the (strictly limited & regulated) rights to catch a certain amount of halibut. Halibut IFQ’s are currently (fall 2024) in the $50 – $60 per pound range, it’s one of the world’s most costly fisheries to enter. Since 2008, the state of Alaska has lowered quotas frequently in order to ensure future sustainability of the fishery. However, halibut biomass has decreased by 30-50% since 2001. Halibut growth rates have been depressed to levels consistent with those of the 1920’s. The average halibut was considerably larger in the 1950’s than it is today. The main factor contributing to the unsustainability of halibut is ocean trawling (dragging) which catches a large number of halibut and other non-targeted species (by-catch) of ocean going fishes. Halibut portions average 8 ounces each.

Beef – 100% Grass-Fed & Grass-Finished

Our herd is raised and finished on native ancient prairie grasses near the Kiowa National Grasslands on the high plains of northeastern New Mexico. Our goal is to produce the finest beef in the world! We are setting a standard for grassFAT beef: our cattle are born and raised on the same ranch their entire lives, about 3 years, eating all grass all the time; truly grassfed to finish. Since 2020, we have diversified our processors and currently use 2 different small USDA plants which are each family owned and operated. Our beef is dry aged 14+ days and stores well in the freezer (0 degrees or colder) for at least 1 year. 

Many beef cuts are much more limited than supermarkets may lead consumers to believe. Think of “middle meats” like ribeye and filet—but the limits extend beyond these popular choices. We understand that the limited availability of certain cuts may be inconvenient, as we can’t always offer every option at every market. Please check back often for updates to our list of available cuts.

Short Ribs/Chuck Short Ribs: delicious combo of meat, fat and bone. Works great for slow cooking, broth, grill and more. Super tasty and tender with a slow and low cooking method. $14 per pound

Shanks: delicious osso bucco and beef stock. Typically 2 shanks per package, 2-3 pounds each. $14 per pound

Chuck Roast: boneless and amazing. Slow roast in the oven or crock pot. Approximately 2  pounds each.  $16 per pound

Stew Meat: perfect for stew and soups. 1 inch cubes, 1 pound packages. $16 per pound

Kabobs: great on the grill. 1 inch cubes, 1 pound packages. $18 per pound

Tenderized Round Steak/Round Steak/Eye of Round Steak: great for tartare, steak fingers or making easy beef jerky. $18 per pound

Grassfed Beef Steaks

Steaks are individually vacuum sealed. We love these! Although our beef is dry aged 14+ days, we prefer to further age these steaks in the fridge another 3-4 days+ before cooking. Remove steaks from fridge/packaging, pat dry and sprinkle Kenny’s Original or NM Spice Rub on each side. Let stand about 20 minutes before cooking.

Top Sirloin Steak: incredibly delicious and grill friendly. $24 per pound

NY Strip Steak: boneless, thick cut and delicious, perfect for grilling. $40 per pound

Ribeye Steak: bone in and amazing on the grill or seared on the stovetop. $40 per pound

Tenderloin/Filet Mignon Steak: thick cut and incredibly tender. $60 per pound

Grassfed Beef Bones

Beef bones are highly limited in quantity and only available occasionally throughout the season.

Soup Bones: cross-cut leg bones with rich, flavorful marrow, perfect for broth and stock. 2-4 pound packages. $6 per pound

Knuckle Bones: large joints, perfect for broth and stock. 3-5 pound packages. $6 per pound

Marrow Bones: canoe-cut long bones full of marrow for roasting or broth and stock. Packages are typically 1 pound or less. $6 per pound

Tendon: for pho or beef stew. Packages are typically under 1 pound. $12 per pound

Oxtail: bone, cartilage, and meat, great for soups. 1 oxtail per package, approximately 2 pounds. $12 per pound

Neck Bones: collagen-rich, marrow, and meat, great for soups and broth. Approximately 2-2.5 pounds per package. $12 per pound

In our experience, 1 pound of bones will yield approximately 1 quart of broth. Beef bones can be reused multiple times for broth or stock until they start to crumble or turn to powder. For a richer, more gelatinous broth, it’s ideal to combine fresh bones with previously used ones.

Beef organs and offal are extremely limited in quantity and only available occasionally throughout the season.

Liver: protein, iron, vitamins, and minerals. Approximately 1-1.5 pound packages, sliced. $6 per pound

Heart: complete protein, zinc, iron, selenium, B2, B6, B12. Typically packaged in halves, 3-4 pounds. $6 per pound

Kidney: rich in bioavailable vitamins and minerals. 2 kidneys per package, adrenals intact, approximately 1-1.5 pounds. $6 per pound

Kidney Fat/Tallow: Course ground fat ready to render. Approximately 2-5 pound packages. $6 per pound

Tongue: mild roast beef texture and flavor, great for tacos! 1 per package, 1.5-2 pounds. $12 per pound

Cheeks: hearty and flavorful, braise or slow cook. 2 per package, typically 1 pound or less. $12 per pound

New Mexico Pork

100% Locally raised in Albuquerque’s south valley. Fed fresh grazed farm forage and finished on a ration of peanuts, pecans and hemp seeds. Absolutely THE BEST pork you will ever taste. We are raising our hogs to a live weight average of 300+ pounds, almost twice as large as commercial pork. We offer a few standard traditional cuts for convenience.

Raw, local and unfiltered! Although our primary honeys are sourced in central and southern Arizona and New Mexico, we offer 3+ varieties of USA floral source honey. Deep dark and medicinal to mild and mellow. Local and regional, we’ve got it all.

Varietals currently (fall 2024) include: Desert Wildflower, Alfalfa Wildflower, Mesquite, Cactus Blossom, Catclaw Acacia, Ambrosia Dumosa, Pima Cotton Blossom,  Meadowfoam, Clover, and Carrot Blossom. Bee Pollen may also be seasonally available.
